Modified Atmosphere Packaging (MAP) or gas flushing is a proven and known method to extend the shelf life and quality of food products. It uses a specific single gas or a cocktail of gases (composed either of nitrogen, oxygen and/or CO2) to create a protective atmosphere around the food.
